3- Onion Sumac salad
1 medium onion
6-8 sprigs of parsley
A teaspoon sumac
2 tablespoons olive oil

• Thinly slice the onion as semi circles. Add 6-8 sprigs of chopped parsley, 1 teaspoon of sumac, salt to taste and 2 tablespoons of olive oil and mix them. You can add pomegranate molasses if you like to.

6- Purslane salad
1 bunch of purslanes
3 tomatoes, use more if using dried tomatoes
2 cloves of garlic
5-6 tablespoons olive oil
Juice of 1 lemon, or vinegar
1 teaspoon salt
2 handfuls roasted almonds
• Wash the bunch of purslanes thoroughly and pat it dry. Chop the leaves and stems together but cut the stems more finely for a better texture.
• Crush the garlic cloves and add them to the purslane in a bowl.
• Slice the tomatoes into thin semi circles and add them to the salad.
• Squeeze the juice of one lemon over the mixture, add the salt and olive oil, roasted almonds
