WHAT’S FOR DINNER? | EASY DINNER RECIPES | NO.50

This week’s meals were so easy but still delicious! I hope you’ll give them a try! Can’t wait to see which ones you plan to try!

Q: Does Steven ever not like anything? 😂

A: Of course!! First of all, we have been married for 19 years and I was not always good in the kitchen. In fact, I was a pretty terrible cook for the first 12 years or so. So there were plenty of times when neither of us liked what I made. But I’ve gotten better at picking out meals that I’m pretty sure we will enjoy. I don’t just go pick a recipe and cook it. I read through it and research different variations before I deem it a good one to try.

Secondly, if we were to not like something I would NOT show it here. Solely because I want to share only recipes that we would recommend. I don’t want to waste your time, or my time (editing) on a recipe we would never tell anyone else to try. We’ve only had that happen twice – and I got rid of the footage we had filmed (which was so sad because we took time to film it).

I hope that answers that question! Remember also that we only film 3 meals a week. The rest of the time we have our family favs or go out to dinner.

Q: Where did you get your chopping block/ cutting board?

A: Our friends gave it to us as a Christmas gift. 🙂 They had a friend who made them, so it’s not something that I can link to as it was handmade.

Q: You made a (insert recipe name here) one time, how do I find that video again?

A: Type in the YouTube search bar – “Mandy in the Making (recipe name)” and it should bring up the video where I made it. Click the video and then check that video’s description box for the recipe. I tag all of my videos with the name of the recipes included so they are easily found. Hope this helps!

BUFFALO CHICKEN PIZZA:
Chicken
1 pop tube of pizza dough (We use Great Value brand but any would work)
2-3 cups mozzarella cheese
1 bottle medium wing sauce (We use Great value brand medium. We like spice and it has a good kick!)
Garlic powder
Salt
Dried italian seasoning
Parsley, dried or fresh – Just to garnish

Roll out pizza dough to the shape and thickness you’d like. I usually do a 10×15 cookie sheet, lined with parchment, and make my dough fit the entire pan since we like a thinner crust. Brush the dough with oil or spray with cooking spray. Next, I lightly sprinkle the uncooked dough with garlic powder, salt, and Italian seasoning to give the dough some flavor. This is totally optional. Bake it 4-5 min or until it begins to golden.
While that bakes, I cook my chicken. I dice it up into small cubes and toss it in a pan with some oil and nature’s seasoning. (I’d never used it until I saw you use it!) Cook until done and browned.

When the dough finishes those 4-5 min, pull it out and add your wing sauce, as much or little as you like. Next add your chicken. Finally top with cheese (we like a lot!). We totally cover the chicken with cheese. I usually just use dried parsley and sprinkle on before we bake the pizza, but fresh would be great to add once it’s done! Cook until the cheese is melted and crust is to your desired “doneness.” We usually cook it 6-8 minutes then broil it the last minute so the cheese is bubbly and browned.
** My husband loves this. He also loves BBQ chicken pizza, so sometimes I’ll make 1/2 BBQ chicken/1/2 buffalo chicken.
For the BBQ chicken, I do everything the exact same but I use BBQ (Sweet Baby Ray’s!) sauce instead of wing sauce, then add diced red onion and chicken, top with mozzarella and finish off baking.

Often I’ll use leftover rotisserie chicken also.
