Blueberry Muffins (used for Carbquick muffins) – recipe by George Stella
Preheat oven to 375 degrees
1. Take out muffin tray
2. Spray muffin tray with cooking spray
3. In a large bowl mix the following:
• 2 eggs
• 1/2 cup of heavy whipped cream
• 1/2 cup of granulated non-sugar sweetener
• Not quite 1/2 cup of water
• 1 cup of Carbquick flour
• 1 teaspoon of baking powder
• 18-24 blueberries
Mix the ingredients together with a spoon
Place in 6 or 7 holes in the muffin pan
Press 3-5 blueberries down into each muffin.
Cook in oven for 20 minutes
