1 eggplant
1/2 cup almond flour
2 tbsp tapioca flour
1/8 tsp garlic salt
1 egg (or flax egg)
1 cup tomato sauce or more if you like it saucy

Cashew ricotta
– 1/2 cup cashews (soaked overnight or 1 hour in boiling water)
– juice 1/2 lemon
– 1 clove garlic
– 1 tbsp avocado oil or olive oil

vegan cheese to top (optional)

Bake 400F for 20-25 minutes or until golden
