I soak the chicken breast in a pickle juice brine for 3 to 4 hours in the fridge I took them out and pounded them out so that they were all even thickness for even cooking. I dipped the chicken breast in my egg wash which was two eggs and some heavy whipping cream. And then dip them in my pork rind mixture and there’s lots of variations to that. I got my cast-iron smokin hot added some avocado oil. Cook the chicken breasts on one side for six minutes flip cover and cook for another 7 to 8 minutes until internal temp of 165. let the chicken rest and ENJOY!
