Mexican Shrimp Cocktail Recipe

Here is the way I like to make Mexican style shrimp cocktail. My favorite way to serve it is on tostadas. This recipe is a light and fresh way to serve a meal or appetizer. It is also a great party food and can be multiplied to feed a hungry crowd. You can adjust the ingredients to your taste and add the fresh elements of your choice.

INGREDIENTS
1lb uncooked unpeeled shrimp
4 1/2 cups water
1/2 small onion
2 cloves fresh garlic
peppercorns (optional)

SAUCE
1/3 to 1/2 cup ketchup
1 1/2 tsp Maggi seasoning sauce (or Worchestershire or soy sauce)
1/4 cup shrimp stock (cooled)
1/4 cup citrus juice (lemon, lime or orange combo works)
1 1/2 tbls hot sauce
1/2 small onion diced
fresh avocado diced
2 Roma tomatoes diced
1/2 cup chopped cilantro
1 diced jalapeno or serrano pepper (if you like it spicy)

This recipe feeds 2 to 3 people as an appetizer
