Dan Dan Noodles (Tokyo Style)
Serves 1
Ingredients
Sauce
¼ C Peanut butter or any other nut butter, crunchy
2 Tbsp Sesame oil, toasted
2 Tbsp Soy Sauce, gluten free, or coconut aminos
1 Tbsp black vinegar (chinese style)
1 Tbsp chili oil (more if you like extra spicy)
Meat & Vegetable
1 Tbsp avocado oil
½ lb ground pork
1 tsp salt
1 tsp Chinese 5 spice
2 ea garlic, cloves, minced
1 tbsp ginger, minced
3 ea mushroom, crimini
½ ea onion, yellow
1 ea scallion, sliced
1 tbsp soy sauce or coconut aminos
1 tbsp black vinegar
1 ea baby bok choy
Noodles
1 pkg shirataki noodle
Method
Make sauce by combining all the ingredients one at a time and whisking until smooth.
Add avocado oil to a pan on medium high heat.
Add pork, spreading it out to as much surface area as possible.
Add salt and chinese 5 spice to the meat.
Add garlic and ginger.
Add onion and mushrooms.
Cook until brown.
Add scallion and mix in.
When it starts to get brown on the bottom of the pan, deglaze with soy sauce and black vinegar.
Bring water to a boil, and blanch bok choy for 1 minute. Remove and add to the meat mixture.
Using the same water back at a full boil, cook the noodles.
Remove, and add to a mixing bowl.
Add meat and vegetable mixture.
Add sauce. Mix thoroughly.
