T Y P E D R E C I P E S
Tuscan Chicken:
1/2 tbs butter
1.5 tbs olive oil
1 lb chicken breast cut into bite sized pieces
Dash of salt and pepper
3 tsp minced garlic
1 cup chicken broth
1 cup heavy whipping cream
1/2 Cup mozzarella
1/4 cup parmigiana
1 tbs corn starch + 1 tbs water to make the cornstarch slurry
1/4 cup sun dried tomatoes

In a pan, melt the butter and 1/2 tbs oil. Add the chicken, a dash of salt and pepper and cook the chicken completely. Remove to separate plate. In the same pan, heat 1 tbs oil and add garlic heating until fragrant. Pour in the chicken broth let simmer for 2 mins. Add the whipping cream and let simmer for additional 3-4 mins. Add in the cheeses then pour the cornstarch slurry in to thicken the sauce. Add in the sun dried tomatoes, spinach and cooked chicken into the sauce and let the spinach wilt down. Serve over egg noodles!

Minestrone Soup:
1 zucchini
2 stocks of celery
2 medium carrots
1 diced white onion
2 tbs olive oil
Dash of salt and pepper
28 oz crushed tomatoes
14 oz tomato sauce
14 oz drained and rinsed kidney beans
5.5 cups vegetable broth
1 tbs dried basil
2 tsp dried parsley
1 tsp oregano
1.5 cups of small pasta noodles
2 cups fresh chopped spinach

In a large pot, I like to use my dutch oven, heat the oil and add in celery, carrots and onion. Sprinkle with a dash of salt and pepper let soften for 5-9 mins. Pour in the crushed tomatoes, tomato sauce, kidney beans, vegetable broth, and seasonings. Simmer covered for 15 mins. Add the pasta in and let simmer for an additional 10 mins. Lastly add in the spinach and let it wilt down. Top your soup with lots of parmesan cheese and serve!

Smothered Pork Chops:
2 yellow onions cut into rings
1 tbs butter
1 tbs olive oil
1 1/4 cup of beef broth
4 medium thick pork chops
1/2 tsp thyme
1/2 tsp garlic powder
Salt & Pepper
2.5 tbs all purpose flour
5 slices of provolone cheese

In a large pan, melt butter and oil then add in the onions and cook for 5 mins. Pour in 1/4 cup of beef broth. Cook for an additional 12-15 mins or until golden brown. Set the onions to the side on a separate plate. Add the pork chops into the same pan and season on each side. Cook for 3-4 mins per side. Once completely cooked remove the pork chops to a separate plate. Add the onions back into the pan and add the flour and stir together until the flour is no longer white. Pour in the remaining cup of beef broth in and simmer until it thickens. Add the pork chops back in and cover with provolone cheese place the lid on top and let the cheese melt. Serve over some mashed potatoes!

Lasagna Soup:
1 lb Italian sausage
1 tbs olive oil
2 tsp minced garlic
1 diced white onion
Pinch of crushed red pepper
2 tsp dried parsley
1/2 tsp dried oregano leaves
1 tsp dried basil
2 Tbs tomato paste
1 24 oz jar of marinara sauce
7 cups of vegetable broth
9 lasagna noodles broken into smaller pieces
1 cup cottage cheese (or you can use ricotta cheese if you prefer that)
1/2 cup mozzarella
1/2 cup parmigiana

In a large pot, heat up the oil then add the sausage, garlic and onion in. Cook the sausage completely through. Drain any excess grease, or try my paper towel method! Add the seasonings, tomato paste, marinara sauce, and broth bring the soup up to a boil. Once boiling add the broken lasagna noodles in and simmer for 10-13 mins or until the noodles are cooked.
For the cheese mixture: in a medium bowl add the cottage cheese, mozzarella, and parmigiana stir to combine. Place 1/4 cup of the cheese mixture into your bowl of soup and enjoy!
