Diabetic Lunch Recipe | Indian Diabetic Diet | Simple and Easy

Diabetic lunch recipe should essentially include less carbohydrates and more veggies. Millets are cereals that are best for diabetics, so this indian diabetic diet includes a big bowl of raw veggies, cooked foxtail millet, mixed vegetable curry and curds. Very simple and complete meal indeed.

Ingredients:
Foxtail millet – 1/2 cup
Water – 2 cups (you can include 1/4 cup more for more softer grains)
VEGETABLE SALAD ingredients:
Chopped cucumber – 1/2 cup
Chopped carrot – 1/2 cup
Coconut – 2 tbsp
Salt – 1/2 tsp
Pepper powder – 1/4 tsp
Coriander leaves – 1 tbsp
MIXED VEG CURRY ingredients:
Potato pieces – 1 cup
Radish pieces – 1.5 cup
Carrot pieces – 1/2 cup
(you can use veggies like drumstick and beans too)
Gram flour – 1/2 cup
Green chillies – 1 nos.
Ginger – 2″ pieces
Red chilly powder – 1 tsp
Turmeric powder – 1/4 tsp
Salt – 1 tbsp
Tamarind water – 2 tbsp
Water as needed
TO TEMPER:
Oil – 1 tbsp
Mustard seeds – 1 tsp
Cumin seeds – 1 tsp
Fenugreek seeds – 1/4 tsp
Asafoetida – 1/2 tsp
Curry leaves – few
