3 EASY DINNER RECIPES | NEW FAMILY FAVORITE ? | WINNER DINNERS | NO. 113

Hey y’all! I’m so glad you are here! This week we had some delicious meals and one of them is a new favorite….as in all three of us are ready to have it again already. LOL! I hope you enjoy this week’s Winner Dinners!

THIS WEEK’S RECIPES:

*SUBBIE SUPPER* Submitted by Christy
Sweet Corn and Zucchini

2 cups of chopped zucchini
1/2 cup diced sweet onion
3 Tbsp of butter
2 cups fresh, or frozen corn
2 tsp taco seasoning
2 Tbsp of butter

Sauté the zucchini and onion in the 3 Tbsp butter until onions start to go translucent- about 5 minutes. Add in the corn, taco seasoning, and remaining butter. Sauté for 5 more minutes over med high heat. Enjoy!

BAKED HONEY GARLIC CHICKEN TENDERS:
1 pound chicken tenders
2 teaspoons soy sauce
1 teaspoon garlic, minced
1 teaspoon ginger, grated
2 large eggs, beaten
1 cup panko breadcrumbs
Green onions, sliced as garnish

For the Sauce:
1/3 cup honey
2 tablespoons soy sauce
1 tablespoon Sriracha
3 cloves garlic, minced

Cornstarch slurry
1 tablespoon water
1 tablespoon cornstarch

Instructions
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Marinate chicken tenders with a splash of soy sauce, garlic and ginger for 15 minutes. Dip chicken tenders into beaten eggs, then panko breadcrumbs. Place on baking sheet. Bake until golden brown and crispy, about 15 minutes.

For the Sauce:
While the chicken is baking, bring honey, soy sauce, Sriracha and garlic to a simmer. Add cornstarch slurry and stir until thickened.

Pour sauce over chicken tenders.
*Note* I recommend doubling the sauce.
