Believe it or not, these healthy salads only need about 5-6 ingredients or less and are great for meal prepping, serving for parties or a refreshing light lunch. These three healthy salad recipes are also gluten-free and low carb!

Watermelon Feta Salad – 5 Ingredients

Ingredients:
– 6 cups cubed watermelon
– 1/2 cup sliced red or white onion (optional)
– 1/2 cup feta cheese
– 1/4 cup fresh mint leaves, chopped
– 1 tbsp lemon zest
– 2 to 3 tbsp fresh lemon juice
– 3 to 4 tbsp olive oil
– Salt to taste
– Black pepper to taste

Instructions:
1. Prep the watermelon, red onion, mint leaves and set aside.
2. In a large mixing bowl, add the lemon zest, lemon juice and olive oil. Whisk until combined, then add salt and pepper.
3. Add the watermelon, red onion and mint leaves and combine well together.
4. Add the feta cheese and gently toss in together.
5. Taste for seasoning. Feel free to add more salt and/or pepper if needed.
6. Ready to serve!

Chicken Blueberry Goat Cheese Salad – 6 Ingredients

Ingredients:
– 4 boneless skinless chicken breasts (about 1 lb)
– 6 cups of arugula (or any salad greens)
– 1 cup blueberries
– 1 large avocado sliced (optional)
– 3/4 cup goat cheese (or feta cheese)
– 1/2 cup thinly sliced red or white onion
– Salt
– Pepper
– Olive Oil
– White Balsamic Dressing (or Balsamic Glaze Dressing)

Instructions:
1. Season the chicken breasts with salt and pepper. In a large pan, add olive oil and bring to medium heat. Cook on each side for 4-6 minutes until it’s fully cooked.
2. Set aside the chicken and let it rest while preparing the salad.
3. In a large mixing bowl, add the arugula, blueberries, and red onion. Mix all together.
4. Add the avocado, goat cheese, and sliced chicken breast on top of the salad.
5. Season to taste, drizzle the dressing over or serve on the side.

Chicken Apple Walnut Salad – 6 Ingredients

Ingredients:
– 4 boneless skinless chicken breasts (about 1 lb)
– 6 cups of kale greens (or spinach)
– 1 thinly sliced apple
– 1/3 cup walnuts (Optional: Lightly sauté with some maple syrup, coconut oil, cinnamon and salt)
– 1/3 cup dried cranberries
– 1/3 cup feta cheese (optional)
– White balsamic dressing
– Salt to taste
– Pepper to taste

1. Season the chicken breasts with salt and pepper. In a large pan, add olive oil and bring to medium heat. Cook on each side for 4-6 minutes until it’s fully cooked.
2. Set aside the chicken and let it rest while preparing the salad.
3. In a large mixing bowl, add the kale greens, apple slices, walnuts, dried cranberries, feta cheese and dressing. Toss together.
4. Serve immediately and enjoy!
