Every Day Detox Salad with Lemon Ginger Dressing

Ingredients:

1 Whole Beetroot with leaves
1 Apple, peeled & julienned
2 Carrots, peeled & julienned
1/4 cup Fresh Coriander, finely chopped
2 tbsp Black Raisins
1 tsp Sesame Seeds, toasted

Dressing:

1 Lemon Juice
1 tsp Honey
1 tsp Ginger, grated

Method:

1. Chop the beetroot leaves, julienne the beetroot.
2. Slice the apple and carrots.
3. Chop the coriander leaves.
4. Mix all of them together with raisins.
5. For salad dressing, in a bowl, add lemon juice, ginger and honey. Mix well.
6. Add the prepared dressing on top of the salad.
7. Garnish with some sesame seeds.

Beet Lettuce Salad with Middle Eastern Dressing

Ingredients:

1/2 Lettuce, shredded
1 Beetroot, chopped & boiled
5-6 Walnuts, toasted
1 tsp Black Sesame Seeds, toasted

Dressing:

1/2 Cucumber, peeled & roughly chopped
1/4 cup Coriander Leaves, roughly chopped
4 Pitted Dates, soaked
1 Lemon Juice
1/4 tsp Cumin Seeds. toasted

Method:

Chop the lettuce and dice the beetroot.
Heat a pan with some water and boil the beetroot until soft (3-4 minutes).
Mix them together in a plate. Add some walnuts.
For the dressing; In a grinder jar, add lemon juice, cucumber, coriander leaves, dates and cumin seeds
Grind it.
Add the prepared dressing on top of the salad.
Garnish with some black sesame seeds.
