3 types of makai paratha

Green garlic makai paratha

Ingredients
Makai flour 1½ cup
Warm water ¾ cup
Chopped green garlic ½ cup
Makai flour 1 ½ cup
Oil 1 tbsp
Salt 1 tsp
Turmeric powder ½ tsp
Red chilli powder ½ tsp
Green chilli chopped 1 tsp
Ajwain ½ tsp
Ghee as required
Butter 2 tbsp

Method
Wash and clean green garlic. Chop it and add to a bowl.
Add salt, turmeric powder, red chilli powder, chopped green chilli, ajwain and mix it.
Mix them and add makai flour.
Add warm water and knead it to a soft dough.
Divide it into portions.
Take one portion and apply dry flour on it.
Dust some flour on the surface. With the help of the palm, press and roll it into a flat paratha.
Heat a flat pan, roast the makai paratha from both the sides.
Apply ghee on the side and remove on a plate.
Serve hot makai paratha with butter and pickle.

Mooli makai paratha

Ingredients
Makai flour 1 cup
Radish leaves a handful
Warm water ½ cup
Radish 2 pcs
Salt ½ tbsp
Oil 1 tbsp
Turmeric powder ½ tsp
Red chilli powder ½ tsp
Ajwain ½ tsp
Anardana powder 1 tsp
Ginger chopped ½ tbsp
Chopped green chilli 1 tsp
Ghee as required
Butter 2 tbsp

Method
Wash and clean radish. Chop green leaves and grate peeled radish.
Add salt, turmeric powder, red chilli powder, chopped green chilli, ajwain, anardana powder and mix it.
Mix them and add makai flour.
Add warm water and knead it to a soft dough. Apply oil and keep it aside.
Divide it into portions.
Take one portion and apply dry flour on it.
Dust some flour on the surface. With the help of the palm, press and roll it into a flat paratha.

Missi makai paratha

Ingredient
Makai flour 1 cup
Warm water ½ cup
Onion chopped ½ cup
Coriander with stem chopped ½ cup
Green chilli chopped 1 tsp
Ginger ½ tbsp
Anardana powder ½ tsp
Ajwain ½ tsp
Chilli flakes 1 tsp
Turmeric powder 1 tsp
Salt ½ tbsp
Oil 1 tbsp
Red chilli powder ½ tsp
Ghee as required
Butter 2 tbsp

Method
In a plate, add chopped coriander, onion chopped, salt, turmeric powder, red chilli powder, chopped green chilli, ajwain, anardana powder and mix it.
Mix them and add makai flour.
Add warm water and knead it to a soft dough. Apply oil and keep it aside.
Divide it into portions.
Take one portion and apply dry flour on it.
Dust some flour on the surface. With the help of the palm, press and roll it into a flat paratha.
Heat a flat pan, roast the makai paratha from both the sides.
Apply ghee on the side and remove on a plate.
Serve hot makai paratha with butter and pickle.
