LOW CARB TERIYAKI CHICKEN LETTUCE WRAPS (Paleo, Gluten/Grain/Dairy/ & Refined Sugar free)

I love throwing together these Teriyaki Chicken Lettuce Wraps. This low carb meal is perfect for on-the-go lunches or a quick dinner. Plus you can make them with ground beef or ground turkey too!

The recipe is paleo, chemical-free, organic, gluten-free, grain-free, dairy-free, refined sugar-free, and soy-free!

Ingredients: (Be sure to copy/paste and save the recipe to a word doc, if you’d like to keep it)

3 pounds of organic ground chicken
A head of organic romain lettuce
A bundle of organic bok choy (chopped)
A bundle of organic scallions (chopped)
5 organic garlic cloves (minced, chopped)
5-6 tablespoons of organic coconut aminos
To taste: sea salt, pepper, garlic powder, onion powder, and ginger.

Directions:

1. Brown your ground chicken in a sauce pan with olive oil on the stovetop in medium high heat.

2. Once the chicken is cooked through add the rest of the ingredients and let simmer for another 5 minutes.

3. Now plate the romain leaves and stuff with the chicken

I focus on paleo recipes because I’ve found that dairy-free, gluten-free, and processed foods-free meals allow me to feel my best. For years I yo-yo dieted and would successfully lose weight, every time, but I was never able to maintain the weight loss. I finally stumbled upon an elimination diet in 2015, and for the first time in my life I was able to not only maintain my weight loss, but it made me realize how sensitive my body is to processed foods; especially when it has dairy and/or gluten in it.

It was such a relief to finally understand why I couldn’t just eat like a “normal” person. I was elated! However, the enthusiam didn’t last long because I realized I couldn’t possibly live the rest of my life without eating cheese, pasta, pizza, bread, butter, etc. etc. I knew that the only way I could maintain this new organic foods “paleo” lifestyle was to start cooking. So, I searched Youtube for paleo channels that were actively posting new recipes, a couple of times a week, and at the time I couldn’t find any, let alone channels that were actively updating an amazon store with paleo products, and uploading tips and tricks as well. I knew I needed to do it, so I started with an iphone and a dream. I literally didn’t even have a digital camera, let alone the ability to make eye-catching thumbnails, oh and the best part? I didn’t know how to cook!!! lol

So, I started off this channel by just figuring it out as I went. I’ve come a long way (to say the least) and I’ve learned a lot. I now focus on making amazing paleo recipes throughout the seasons. You don’t have to worry about not having your pumpkin spice lattes in the fall, or your pies during the holidays, I have it all for you, and the best part? It’s all paleo style! So you and your family can enjoy your favorite treats; AND the holidays without worry.

I pride myself on making everything easy and delicious! The last thing I want is for you to have to buy 20 ingredients to make one meal. This is a healthy paleo lifestyle channel that will allow you to save time! And you can confidently eat delicious meals and desserts too!!
