Spicy Asian Salad with Cucumber | Spicy Asian Salad Recipe!

Here is how I made it:

1. Start by cutting 4-5 Persian cucumbers or 3 Japanese cucumbers into half moons, coins, or sticks. Cut them in whatever shape you prefer, just don’t make them too thick. You want them to absorb all the flavour.

2. Add the cucumber to a bowl, then add 1 large minced garlic clove.

3. Season the cucumber with a couple of small pinches of salt, then add 2-3 tbsp rice vinegar, 2-3 tbsp soy sauce or tamari, 1.5 tsp sesame oil, 1.5 to 2 tbsp powdered sweetener of choice (I used monk fruit), then give it a good preliminary mix.

4. Once the salad is mixed, top it with 1/3 cup roasted peanuts, some Korean chilli flakes or chilli flakes of your choice, add a small handful of finely chopped fresh mint, some sesame seeds, and 1 to 2 tbsp of a spicy chilli crisp. Give it a good mix, then plate it up.

5. Plate it up, and top it with black sesame seeds, some fresh mint leaves, and some more chilli crisp.
