When not in a mood to cook fancy dinner or lunch make this easy Corn Salad with unique dressing at home. Made with corn, vegetables and olive dressing this salad can be had for brunch or as a snack. Try it at home and let us know in the comments below.
Ingredients:
1 Cucumber, chopped
1/2 Onion, chopped
1/2 Capsicum, chopped
1/2 Yellow Capsicum, chopped
1 Carrot, chopped
10-12 Cherry Tomatoes, cut into halves
1 Cup Yellow Corn, boiled
Few Lettuce Leaves
Spinach Leaves
Ingredients for dressing:
1 tbsp Olive Oil
1 tsp Soy sauce
1 1/2 tbsp Honey
Juice of 1/2 lemon
1 Clove Garlic, grated
¼ tsp Red Chili Powder
½ tsp Chat Masala
Salt to taste
For Garnishing:
Blackberries
Cranberries
Sesame Seeds
Method of preparation:
In a bowl add cucumber, onion, capsicum, yellow capsicum, carrot, cherry tomatoes, yellow corn, lettuce leaves, spinach leaves, and toss all the vegetables together.
Keep the bowl aside and start prepping for the dressing of the salad.
In another bowl add olive oil, soy sauce, honey, lemon juice, garlic, red chili powder, chat masala, salt, and whisk all the ingredients together for at least 2 minutes.
Pour little bit of the dressing into the salad bowl and toss it up lightly.
Add some more of the dressing if needed and then give a final toss.
Remove the salad in a serving bowl and garnish it with blackberries, cranberries and some sesame seeds.
