A Week of Lunch & Reading | Healthy Plant Based Recipes

So apparently I now like lunch I hope you do too. Here are the recipes:

Lentil Patties
A bunch of Basil, Parsley, Coriander
1 red onion
4+ garlic cloves
2 cups of cooked lentils
1 cup of chickpea flour
2 flax eggs
1/2 tsp – 1 tsp Chilli flakes
Salt and pepper

Pulse the onion, garlic and herbs together. Add half of the lentils, flax egg, chilli, salt and pepper and half of the chickpea flour.
Transfer to a bowl and add the remained of the ingredients.
Place in the fridge to chill as you chop other veggies and let the oven preheat to 350F.
Cook for 30-40 mins, flipping half way through.

Carrot Salad
3-4 grated carrots
1/2 diced red onion
1 clove of diced garlic
A couple of tbsp of red wine vinegar
1 tbsp of whole grain mustard
2-3 tbsp olive oil

Pinto Beans
450g of pinto beans (I soak my beans for 24-48 hours)
1 large onion, chopped
1 diced pepper/capsicum
5+ cloves of garlic, diced
1 tbsp oregano
1 tsp cumin
1 tsp chilli
A pinch of cinnamon
1 tbsp brown sugar
Bunch of coriander
Salt and pepper to taste (I add the salt after they’ve cooked)

Sautee onion, pepper and garlic in oil until softened and fragrant. Add pinto beans, water and spices (not salt nor sugar) Bring to a boil, then lower heat and cook for an hour, with lid on.
Remove lid, add salt and sugar and cook for another 45 to an hour, or until fork tender. Add coriander before serving.

I served the pinto beans on corn tortillas with cherry tomatoes that I chopped and put in a bowl with lemon, olive oil, red onion and salt and pepper.
I quickly massaged some cabbage with apple cider vinegar, salt and pepper to soften.

Pasta Sauce
2 chopped onions
6 cloves of garlic, chopped
2 tbsp of capers chopped
1/4 cup of olives, chopped
1L passata
1 tbsp dried basil
2 tsp oregano
1 1/2 tsp fennel seeds
1 tsp chilli flakes
Salt and pepper

Sautee onion and garlic until soft and fragrant. Add olives, capers and passata. Add all seasoning and bring to a boil. Turn down heat and let simmer for 30mins minimum! A good sauce comes from a long simmer
