Recipe 1: Achari Paneer
Ingredients
6 Red Chillies
2 tablespoon Coriander Seeds
2 tablespoon Fennel Seeds
2 tablespoon Cumin Seeds
1-1/2 tablespoon Mustard Seeds
1/2 teaspoon Fenugreek Seeds
2 medium Tomatoes (Diced)
1 medium Capsicum (Diced)
2 tablespoon Oil
1-1/2 teaspoon Kalonji Seeds
1/2 teaspoon Asafoetida
1 teaspoon Ginger Garlic Paste
1/4 teaspoon Turmeric Powder
1-1/2 teaspoon Chilli Powder
1/2 Cup thin Whisked Curd
1 tablespoon Sugar
400 grams Paneer Cubes
Salt, to taste
Coriander Leaves

Recipe 2: Lobia Masala
Ingredients
1/2 cup Lobia ( Black Eyed Beans)
1 cup Water
1 teaspoon Oil
1/4 teaspoon Mustard Seeds
1/4 teaspoon Asafoetida
1 tablespoon Ginger Garlic & Green Chilli (Minced)
1/4 teaspoon Turmeric Powder
1 teaspoon Chilli Powder
1/2 teaspoon Coriander Powder
1 teaspoon Cumin Powder
1/2 cup Tomato (Chopped)
1 tablespoon Jaggery (Powdered)
1 teaspoon Lime Juice
1/2 teaspoon Garam Masala
Salt, to taste

Recipe 3: Kadai Mushroom
Ingredients
Oil
1 cup Button Mushroom
1 cup Potato (Peeled)
1 Bay Leaf
3 Cloves
1 inch Cinnamon Stick
3 Green Cardamom
1 cup Onion (Chopped)
1 teaspoon Ginger Garlic Paste
1/2 cup Tomato (Chopped)
1/4 teaspoon Turmeric Powder
1 teaspoon Coriander Powder
1 teaspoon Chilli Powder
1 tablespoon Yogurt
1 cup Water
1 teaspoon Kasuri Methi (Crushed)
1 teaspoon Garam Masala

1 cup Water
1/2 teaspoon Aamchur Powder
1/2 teaspoon Garam Masala
1 teaspoon Kasuri Methi
