5 Course Meal I Party Menu I Dinner Table Layout I कैसे बनाएं 5 कोर्स मील I Pankaj Bhadouria

Get ready for a Masterclass in a 5 Course Meal. In this video, I am sharing with you how to plan a 5 course meal, what a modern Indian party dinner menu for a 5 course meal could be like, how to set up the formal table for a 5 course meal.
The Menu for my 5 course meal is a perfectly balanced modern Indian menu.
For the 1st course: appetizers- we have a very trendy Chaat board followed by the 2nd Course: soup- a Mushroom Almond Soup. The 3rd course will be a Paneer Tikka Biryani with Mint Raita, followed by the 4th Course- Fruit & Cheese- strawberry, pineapple, mint Cheese skewers. The 5th course: Dessert- ends the meal with a rasmalai trifle.

Recipe :

Chat Board Platter
Preparation Time:30 minutes
Cooking Time: 20 minutes
Serves: 4-5

Ingredients:
2 cups boiled mashed potatoes
½ cup green chutney
½ cup sweet tamarind chutney
½ cup sweet curd
½ cup pomegranate
Salt to taste
Mint leaves
Lemon wedges
Chat masala
30-35 papdi
2 tbsp melted butter

Method:
Add salt, melted butter to mashed potatoes. Fill in piping bag and pipe out florets on a board. Drizzle sweet curds, chutneys over it. Dot with mint leaves, lemon wedges, sprinkle chaat masala and line with papdi. Serve.

Corn Almond Soup
Preparation Time:30 minutes
Cooking Time: 20 minutes
Serves: 4-5

Ingredients:
200g corn
50g almonds, soaked, peeled, pureed
½ cup chopped onions
Salt to taste
½ tsp Pepper
½ cup cream
2 bay leaves
2 tbsp butter
½ tsp red chili flakes
1 tsp lemon juice

Method:
Heat butter in a pan. add the onions, bay leaves and sauté till translucent. Add corn and cook for 3-4 minutes. Add almond paste, 3 cups water and Simmer 8-10 minutes. Cool, blend to a smooth puree and pass through a sieve. Return to the pan. Season with salt, pepper, red chili flakes, add cream and bring to a boil. Add lemon juice and serve garnished with chili oil and a sprig of parsley.

Pineapple Strawberry Cheese Skewers
Preparation Time:30 minutes
Cooking Time: 20 minutes
Serves: 4-5

Ingredients:
½ fresh pineapple
1 pack strawberries
6 Cheese cubes

Method:
Cut cheese cubes into quarters. Cut pineapple chunks & strawberries to the same size. Arrange on toothpicks with mint leaf on top. Serve.

Paneer Tikka Biryani
Preparation Time:30 minutes
Cooking Time: 30 minutes
Serves: 4-5

Ingredients:
400g Paneer
For marinade:
2 tbsp Ginger garlic paste
1 cup yoghurt
2 tbsp Kashmiri red chili powder
2 tbsp mustard oil
2 tsp garam masala
1 tbsp kasuri methi
Salt to taste
For rice:
3 cups basmati rice
2 bay leaves
5 cloves
2 black cardamoms
For biryani:
1 tsp caraway seeds
1 cup sliced onions
2 tbsp ghee
2 tbsp Saffron
Kewra water
Mint leaves
Mint Raita to serve

Method:
Mix all ingredients mentioned for the marinade. Cut paneer into cubes and marinate in the mixture for 30 minutes.
Heat oil in a pan. add whole spices for paneer & splutter. Add sliced onions and sauté till golden. Add marinated paneer and cook for 6-8 minutes till paneer is cooked.
Boil 8 cups water in a pan. Add the whole spices for the rice and 3 tsp salt. Simmer 4-5 minutes. Add soaked rice and cook al dente. Drain rice.
In a pan, spread half the rice, top with a layer of paneer. Spread remaining half rice. Dot with paneer gravy, saffron milk, kewra water, mint leaves and put on dum for 20 minutes. Remove from heat and open before serving with mint raita.

Rasmalai Trifle
Preparation Time:30 minutes
Cooking Time: 20 minutes
Serves: 6

Ingredients:
Vanilla sponge cake
6 rasmalai
3 cups Whipped cream
Chopped pistachios
Saffron milk
Rose petals

Method:
Layer glasses with broken sponge pieces. Top with a rasmalai and some rasmalai milk. Add half cup rasmalai milk, soaked saffron to the whipping cream and mix lightly.
Pipe out the whipped cream on top of rasmalai. Garnish with chopped pistachios, rose petals. Chill & Serve.
