This gluten free banana bread is free from refined sugar and white flour which are highly inflammatory
However I make this delicious ๐คค easy gluten free banana bread with healthy ingredients like cassava flour (good source of vitamin C, copper, antioxidants and support collagen production and enhance mood) also it has walnuts rich in HDL (aka good cholesterol ) also bananas which are rich source of potassium. I used coconut ๐ฅฅ sugar (which doesnโt spike insulin and can be used if you are on a weight loss plan).
๐๐น๐๐๐ฒ๐ป ๐ณ๐ฟ๐ฒ๐ฒ ๐ฏ๐ฎ๐ป๐ฎ๐ป๐ฎ ๐ถ๐ป๐ด๐ฟ๐ฒ๐ฑ๐ถ๐ฒ๐ป๐๐:
1-1/4 cup gluten free flour (Can use almond flour, cassava flour or grounds rolled oats flour) i have used cassava flour
1/2 cup old fashioned rolled oats
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp xanthan gum
1/4 tsp salt
1/2-1 tsp cinnamon
2 large eggs
4 large bananas overripe
1/2 tsp vanilla powder
1/2 cup greek yogurt
1/2 cup coconut ๐ด sugar
1/2 cup melted butter
๐๐ป๐ด๐ฟ๐ฒ๐ฑ๐ถ๐ฒ๐ป๐๐ ๐๐ผ๐ฟ ๐๐ถ๐น๐น๐ถ๐ป๐ด:
1/2 cup dark chocolate or 1/2 cup chopped walnuts
๐ง๐ผ๐ฝ๐ฝ๐ถ๐ป๐ด๐ ๐๐ป๐ด๐ฟ๐ฒ๐ฑ๐ถ๐ฒ๐ป๐๐:
2 tbs greek yogurt
1 tsp honey
Or
1 tbs melted dark chocolate
๐๐ถ๐ฟ๐ฒ๐ฐ๐๐ถ๐ผ๐ป:
1๏ธโฃ Mix all wet ingredients together
2๏ธโฃMash 3-4 overripe bananas andadd in wet ingredients and mix well
3๏ธโฃ mix al dry ingredients and mix well
4๏ธโฃThen add and mix slowly dry ingredients into wet ingredients. The consistency will be thick and sticky
5๏ธโฃchop 1/2 cup of walnuts and fold into the batter or you can add 1/2 cup of dark chocolate
6๏ธโฃ Now lined a bread pan with parchment paper andgrease with oil. Add batter and bake at 350F fo30-40mins or until a toothpick comes out clean. Let bread ๐ cool down completely and then cut slices.
7๏ธโฃfor banana bread toppings mix 2 tbs of greek yogurt with 1tsp of ๐ฏ honey or melt some dark chocolate ๐ซ. Now serve bread slices with yogurt cream and melted chocolate.
