Healthy Gluten Free Banana Bread – Paleo Oatmeal Bread (No Flour, No White Sugar)

This gluten free banana bread is free from refined sugar and white flour which are highly inflammatory

However I make this delicious ๐Ÿคค easy gluten free banana bread with healthy ingredients like cassava flour (good source of vitamin C, copper, antioxidants and support collagen production and enhance mood) also it has walnuts rich in HDL (aka good cholesterol ) also bananas which are rich source of potassium. I used coconut ๐Ÿฅฅ sugar (which doesnโ€™t spike insulin and can be used if you are on a weight loss plan).

๐—š๐—น๐˜‚๐˜๐—ฒ๐—ป ๐—ณ๐—ฟ๐—ฒ๐—ฒ ๐—ฏ๐—ฎ๐—ป๐—ฎ๐—ป๐—ฎ ๐—ถ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€:

1-1/4 cup gluten free flour (Can use almond flour, cassava flour or grounds rolled oats flour) i have used cassava flour
1/2 cup old fashioned rolled oats
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp xanthan gum
1/4 tsp salt
1/2-1 tsp cinnamon
2 large eggs
4 large bananas overripe
1/2 tsp vanilla powder
1/2 cup greek yogurt
1/2 cup coconut ๐ŸŒด sugar
1/2 cup melted butter

๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€ ๐—™๐—ผ๐—ฟ ๐—™๐—ถ๐—น๐—น๐—ถ๐—ป๐—ด:

1/2 cup dark chocolate or 1/2 cup chopped walnuts

๐—ง๐—ผ๐—ฝ๐—ฝ๐—ถ๐—ป๐—ด๐˜€ ๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€:

2 tbs greek yogurt
1 tsp honey
Or
1 tbs melted dark chocolate

๐——๐—ถ๐—ฟ๐—ฒ๐—ฐ๐˜๐—ถ๐—ผ๐—ป:

1๏ธโƒฃ Mix all wet ingredients together

2๏ธโƒฃMash 3-4 overripe bananas andadd in wet ingredients and mix well

3๏ธโƒฃ mix al dry ingredients and mix well

4๏ธโƒฃThen add and mix slowly dry ingredients into wet ingredients. The consistency will be thick and sticky

5๏ธโƒฃchop 1/2 cup of walnuts and fold into the batter or you can add 1/2 cup of dark chocolate
6๏ธโƒฃ Now lined a bread pan with parchment paper andgrease with oil. Add batter and bake at 350F fo30-40mins or until a toothpick comes out clean. Let bread ๐Ÿž cool down completely and then cut slices.
7๏ธโƒฃfor banana bread toppings mix 2 tbs of greek yogurt with 1tsp of ๐Ÿฏ honey or melt some dark chocolate ๐Ÿซ. Now serve bread slices with yogurt cream and melted chocolate.

03:49 Fold chopped walnuts into the batter
04:00 Lined a bread pan & grease with oil
04:40 Pour mixture into the bread pan and bake
04:32 Bake banana bread at 350F for 30-40 minutes

04:49 Cut Banana bread slices
