Ingredients for 1 serving:
2 – 3 eggs
pinch of salt & pepper
1 (gluten-free) high-fiber tortilla, I used an oat tortilla
handful of arugula
1 tomato, sliced
2 prosciutto slices
1 oz. / 30 g crumbled feta

1. Mix the eggs and salt & pepper together
2. Pour into a greased pan and add the tortilla on top. Cook on medium heat for about 3 minutes. Flip it around and cook for 2 more minutes
3. Add your fillings, fold the wrap and enjoy!
