FRENCH MARTINI
The French Martini was first created in the 1980s by New Year bartender Allen Katz (now the master distiller at New York Distilling Company). This an adapted recipe which calls for Chambord Black Raspberry liqueur in place of the original crème de cassis.
Cassis creates a drier style French Martini while Chambord creates a sweet, rich and velvety drink. The most popular recipe uses a 4:1:3 ratio (Vodka, Cassis, Pineapple Juice) but I’ve opted for the sweeter ratio of 1:1:2 (Vodka, Chambord, Pineapple Juice) which really heroes the Chambord. This ratio also works best when using a combination of store bought (unsweetened juice) and fresh press pineapple juice – the fresh pineapple brings extra acidity to balance the sweeter ratio.
INGREDIENTS
– 30ml Chambord Black Raspberry Liqueur (1 oz)
– 30ml Finlandia Vodka (1 oz)
– 60ml Pineapple Juice (1 part fresh, 1 part unsweetened)
CHAMBORD ROYALE
The Chambord Royale is a simple and tasty variation of a classic Kir Royale, substituting the sweet, rich Chambord Black Raspberry Liqueur in place of creme de cassis.
Chambord is made with a cognac base, red & black raspberries, Madagascan vanilla, honey and citrus – although the decadent liqueur’s prominent flavour is black raspberry.
INGREDIENTS
– 7.5ml Chambord Black Raspberry Liqueur (0.25 oz)
– 90ml Champagne or Prosecco (3 oz)
CHAMBORD SIDECAR
A simple variation on the classic sidecar (which is a descendant of the Brandy Crusta). The original Sidecar’s origin is debated with both a French and English bar claiming to have first created the combination of cognac, Cointreau and lemon juice for a customer who arrived at the location in the sidecar of a motorcycle.
Bar veteran Dale DeGroff argues that the drink’s name references the mixture that’s left in the shaker after mixing a drink which is then strained and served in a shot glass on the side (and aptly called a Sidecar).
Chambord Black Raspberry liqueur can be used in place of the existing sweetener in many classic cocktails and the Sidecar is an excellent example of this.

– 45ml Cognac or Brandy (1.5 oz)
– 22.5ml Chambord Black Raspberry Liqueur (0.75 oz)
– 7.5ml Dry Curacao (0.25 oz)
– 22.5ml Fresh Lemon Juice (0.75 oz)
