Mug Muffin – Two ways! [Centre for Healthy Active Kids Recipes]

Make a muffin in the microwave! These fibre and protein packed muffins can be made in minutes. Follow the recipe below or choose your own flavours!

Make these mug muffins ahead of time and store in the fridge for 3 to 4 days or in the freezer for up to 4 months. Simply thaw in the microwave for 1 minute or in the fridge overnight. Enjoy cold, at room temperature, or warm from the microwave!

Prep Time: 5 minutes
Cook Time: 2 to 3 minutes

Equipment Required:
Microwave
Mug

Ingredients:
Apple Cinnamon:
1/2 ripe banana
1 large egg
1 teaspoon vanilla extract (optional)
1 teaspoon maple syrup (optional)
1/4 cup quick cooking rolled oats
1/2 apple, diced in small cubes
1 tablespoon of chopped nuts (walnuts or pecans)
pinch of cinnamon

OR

Lemon Cranberry:
1/2 ripe banana
1 large egg
1 teaspoon vanilla extract (optional)
1 teaspoon maple syrup (optional)
1/4 cup quick cooking rolled oats
2 teaspoons lemon zest
1 tablespoon dried cranberries

Method:
1. Mash the banana with a fork in a large mug until smooth.
2. Add the egg, and stir well.
3. Add the vanilla, maple syrup, and oats. Mix well to combine.
4. Add the remaining ingredients and mix.
5. Microwave muffin in mug for 2 to 3 minutes.
6. Remove from microwave and empty muffin on to plate. Let cool slightly before enjoying.
