Sweet potato boat ingredients:
– 2 medium size sweet potatoes
– 1+1/2 cup great northern beans (or any white beans of your choice)
– 1/2 tomato, chopped
– 2 tablespoons fresh chopped cilantro
– 1/2 to 1 avocado
Sauce:
– 1+1/2 tablespoon nutritional yeast
– 1 tablespoon tahini
– The juice of 1/2 lemon
– 1/2 teaspoon curry powder
– Salt to taste
Tofu scrambled:
– 1 bloc of firm tofu (14 oz)
– 1 cup chopped mushrooms
– 1/2 onion, chopped
Salad: Any greens and veggies of your choice. Salad dressing: 1 teaspoon mustard, 1 tablespoon of balsamic vinegar, 1 to 2 tablespoons of olive oil
Asparagus salad:
– 4 Large lettuce leaves
– 1 cup cooked quinoa
– 1 cup chickpeas
– Asparagus
– 1/2 avocado
– 2 tablespoons sunflower seeds
Salad dressing: 1+1/2 tablespoon tahini, juice of 1/2 lemon, 2 tablespoons coconut aminos, 1 teaspoon curry powder, salt to taste
