🍰 Unlike a traditional heavy fruit cake, this recipe has a wonderfully soft sponge that stays moist while the dried fruit adds bursts of natural sweetness throughout.

🍰 It’s incredibly easy to make with everyday ingredients and perfect for breakfast, afternoon tea or as a simple homemade dessert.
Coating the dried fruit with a little flour before adding it to the batter helps keep the fruit evenly distributed throughout the cake.

🍰 Easy Fruit Loaf Cake

Ingredients

Dried fruit – 100g (½ cup) (or more if you prefer)
Eggs – 3
Sugar – 150g (¾ cup)
Salted butter – 150g (⅔ cup), melted
Plain flour – 180g (1 cup + 3 tablespoons)
Baking powder – 1 teaspoon
Milk – 30ml (2 tablespoons)
Vanilla extract – 1 teaspoon

Equipment

Measuring cup size: 240ml
Baking pan: 21 × 11 × 6 cm (2 lb loaf pan)

Bake in a preheated oven at 170°C (350°F) for 40–50 minutes.

Method

Prepare the Dried Fruit

Place the dried fruit in a small bowl and toss it with 1 tablespoon of plain flour. This helps prevent the fruit from sinking to the bottom of the cake. Set aside.

Make the Cake Batter

In a large mixing bowl, whisk together the eggs, sugar and vanilla extract for about 4 minutes, or until the mixture becomes pale, light and fluffy.
Pour in the cooled melted butter and whisk for 1 minute until well combined.
Sift the plain flour and baking powder directly into the bowl.
Gently fold the dry ingredients into the batter until almost combined.
Add the milk and whisk on low speed for about 10–15 seconds, just until smooth.
Give the batter one final gentle mix to ensure everything is evenly incorporated.

Assemble the Cake

Pour about one-third of the batter into the lined loaf pan.
Gently fold the floured dried fruit into the remaining batter.
Spoon the fruit-filled batter over the first layer and spread it evenly.
If you like, scatter a few extra pieces of dried fruit over the top before baking for a beautiful finish.

Bake

Bake in a preheated oven at 170°C (350°F) for 40–50 minutes, or until a skewer inserted into the centre comes out clean.

If the top of the cake begins to brown too quickly, loosely cover it with aluminium foil and continue baking until fully cooked.

Allow the cake to cool slightly before removing it from the pan.
Slice and enjoy warm, or let it cool completely before serving.
