Paleo cauliflower spicy rice is an alternate for regular rice items. This is an apt lunch item for who follows LCHF / PALEO / KETO diets. A very healthy veg recipe.
Ingredients:
350g grated cauliflower
1 big onion finely chopped
2 tomatoes chopped
1 green capsicum chopped
2 tbsp butter
1 inch cinnamon
4-5 cloves
2 bay leaves
3/4 Tbsp minced garlic
3/4 Tbsp minced ginger
1/2 tsp turmeric powder
1 tsp chilli powder
1/2 tsp coriander powder
1/2 tsp garam masala powder
Coriander leaves chopped
Salt
Direction:
Wash the cauliflower florets in salted water and grate it, keep it aside.
Heat butter over low to medium heat.
Add bay leaves, cinnamon, cloves and sauté it.
Add onion, salt and fry for few mins until it turns to light brown.
Add ginger and then garlic into the pan and fry for a while.
Add turmeric powder, chilli powder, coriander powder and garam masala and stir well.
Now add cauliflower into the masala mixture and stir well, cover the pan with a lid for 7-8 mins.
Once done open the pan and add a Tbsp of butter and mix. Garnish with coriander leaves.
It can be eaten with raitha / boiled egg.
Serve hot.
