To Make Jeera Rice
Basmati Rice – 1 Cup
Water
Salt – 1 Tsp
Ghee – 2 Tsp
Cumin Seeds – 1 Tbsp
Green Chili – 1 No. (Optional)
Cooked Rice
Coriander Leaves

Jeera Rice

Cook some long grain basmati rice and keep aside
Heat some ghee in a kadai
Add cumin seeds and roast them
Add green chilies and saute for 2 minutes,
Add cooked rice, salt and mix well
Garnish with coriander leaves and serve hot.

Malai Kofta
Ingredients

Butter
Oil
Whole Spices
(Cumin Seeds, Cinnamon, Clove, Cardamom & Pepper)
Onion – 2 Nos Finely Chopped
Green Chili – 3 Nos
Garlic – 2 Cloves
Ginger
Tomato – 4 Nos Chopped
Cashew Nuts – 20 Nos
Turmeric Powder – 1/4 Tsp
Kashmiri Chili Powder – 2 Tsp
Coriander Powder – 1 Tsp
Cumin Powder – 1 Tsp
Salt – 1/2 Tsp
Sugar – 2 Tsp
Water
Garam Masala – 1/2 Tsp
Kasuri Methi
Coriander Leaves
Fresh Cream – 1/4 Cup

To Make Kofta
Boiled Potato – 2 Nos
Paneer – 200 Gms
Salt To Taste
Green Chili – 2 Nos Chopped
Coriander Leaves
Corn Flour – 1 Tsp
Chopped Cashew Nuts & Raisin
Oil For Deep Frying

Method
Heat a pan with some oil and butter, add the whole spices
Fry them, till they release the aroma
Add onions, green chilies, ginger, garlic and saute them
Add tomatoes, cashew nuts and saute till they are cooked
Add salt, sugar, red chili powder, turmeric powder, cumin powder, coriander powder and saute
Cook for 5 mins
After everything is cooked, let the mixture come to room temperature
Grind them to a smooth paste by adding some water
Heat the same pan with some butter, add the pureed gravy into it
Bring it to a boil
Add garam masala, fresh cream, coriander leaves, and kasuri methi
Mix everything well
Set the gravy aside
Take a bowl, add paneer, boiled potatoes add green chilies, salt, coriander leaves and mash well
Add corn flour and mix well
Take a small portion of the mixture, fill it with raisins and chopped cashews
Make it into round balls and set aside
Heat some oil for deep frying
Deep fry the balls till they turn golden brown in color
To assemble the malai kofta, place the kofta balls in a plate, and pour the hot gravy over it just 5-10 mins before serving
Enjoy the delicious Malai Kofta with butter naan, roti or pulao.
