The Haystack is a creation of a London bartender from 2017. He states that it’s a “yellow version of Sam Ross’ Paper Plane”. I would say that he has drawn inspiration from the Paper Plane but I wouldn’t refer to it as a variation as the flavour profile differs significantly.
Woody, herbal, bitter tones from the Suze (Gentian liqueur), sweet stone fruit courtesy of the Apricot Brandy Liqueur and a touch of sour from the fresh lemon juice.
INGREDIENTS
– 30ml Bourbon Whiskey
– 30ml Suze Gentian Liquer
– 15ml Apricot Brandy Liqueur
– 15ml Fresh Lemon Juice
METHOD
1. Combine all the ingredients to your cocktail shaker
2. Shake with ice
3. Strain into a chilled, stemmed cocktail glass
4. Garnish with a twist of lemon
