The BEST Amish Deli Style Potato Salad Recipe

INGREDIENTS:
3-4 pounds of diced cooked potatoes – I used Russet
1/4 to 1/2 cup finely diced onion
1/2 to 1 cup finely diced celery
3-4 chopped hard boiled eggs
2 tbsp. chopped dill pickle or sweet relish
1 cup mayonnaise
salt and black pepper

Dressing:
2 eggs
3/4 cup white sugar
1 tsp. cornstarch
1/2 tsp. salt
1/3 cup apple cider vinegar
1/2 cup milk
1 tsp. dry mustard
3 tbsp. butter
*Place above ingredients in medium saucepan and whisk together.
Bring to a boil on medium heat stirring constantly. This will take about 10-15 minutes.
Once thickened, remove from heat, cool to room temp then refrigerate until cold.

Once cold, add mayonnaise and stir and add to potato salad.

Stir all ingredients together and refrigerate for at least 4-6 hours, overnight is better!

INGREDIENTS:
2 – 16oz bags of frozen peas – thawed to room temp
1/2 cup cooked crumbled bacon
6 oz. finely cubed cheddar cheese
3/4 cup finely diced red onion

Sauce:
3/4 cup mayonnaise
3/4 cup sour cream
1 Tbsp. sugar
2 Tbsp. white vinegar
1 Tbsp. fresh lemon juice
1/2 tsp. kosher or sea salt
1/2 tsp. white or black pepper
1 tsp. dried dill weed
*Mix together well.

In a large bowl combine ingredients and sauce. Mix well and refrigerate for 1-2 hours before serving.

Classic Authentic AMISH Macaroni Salad Recipe

INGREDIENTS:
1 pd. cooked macaroni pasta
1/4 cup finely diced onion
2 stalks finely diced celery
3/4 cup finely diced dill pickles or sweet relish
4 large roughly chopped hard boiled eggs

Dressing:
2 cup mayonnaise
2 tbsp. mustard
2 tbsp. sugar
2 tbsp. vinegar
1 tbsp. olive oil
1/4 tsp. salt
1/4 tsp. black pepper
1/4 tsp. celery seed
*Mix above ingredients

Mix cooked macaroni pasta, onions, celery, pickles and eggs.
Pour dressing over top and mix to combine well.
Refrigerate for at least 2 hours before serving.
You can add more mayonnaise if you like to make creamier.
Enjoy.
