Cream Cheese Dip Platter
Preparation Time: 20 minutes + Chilling Time
Serves: 8-10

Ingredients:
100g paneer
½ cup hung curd
½ cup cream
2 tbsp lemon juice
1 tbsp chopped garlic
Salt
Chopped parsley
Red chili flakes
Crushed peppercorns

To serve:
Nachos
Carrot sticks
Cucumber sticks
Breadsticks
Digestive crackers

Method:
Mix together the paneer, hung curd, garlic, salt, lemon juice, cream and pulse in a blender to mix till smooth. Spread the chopped parsley , red chili flakes, crushed pepper corns, chopped red bell peppers on a 8” X 8” butter paper or cling wrap. Place the blended cream cheese mixture in the centre and cover from the sides. Roll like a log and chill for 2 hours.
Unwrap the chilled cream cheese and slide on a board. Serve with carrot sticks, cucumber sticks, nachos, bread sticks & Digestive biscuits on the side.

Blooming Beans Quesadilla Rings
Preparation Time: 20 minutes
Cooking Time: 40 minutes
Serves: 8-10

Ingredients:
3 cups cooked rajma
20 rotis
1 onion, chopped
1 red bell pepper, chopped
1 cup taco sauce
3 cups shredded cheese

Method :
Preheat the oven to 375˚F (190˚C). Line a baking sheet with parchment paper.
In a large bowl, add the rajma, onion, red bell pepper and taco sauce, and mix to combine. Set aside.
Cut each tortilla in half. Evenly add about 2 tablespoons each of the cheese, Monterey Jack and rajma mixture to each tortilla half.
Roll the tortillas into cones
Place a wide mouth jar or glass in the centre of the baking sheet.
Create a ring around the jar with about 13 tortilla cones. The points of the cones should be in the centre, touching the jar. Sprinkle cheese over the layer. Repeat with the remaining cones to make 2 more layers, finishing with the rest of the cheese.
Remove the jar from the centre of the ring.
Bake until the cheese is melted and the edges of the tortillas are crispy, 12-15 minutes.
Carefully transfer the blooming quesadilla to a serving platter. More taco sauce inside the ring and sprinkle chopped coriander or parsley. Serve immediately.

Devilled Baby Potatoes
Preparation Time: 20 minutes
Cooking Time: 12-15 minutes
Serves: 8-10

Ingredients:
20 baby potatoes (same size)
¼ cup hung curd
¼ cup garlic cheese spread
2 tbsp Chopped red bell pepper
2 tbsp Chopped parsley

Method:
Scrub well the baby potatoes and wash well. Cut flat the bottom of the potato. From the other side, scoop out a hollow using a melon scooper. Wash well the potatoes and drain well. Fry the potatoes in medium hot oil till golden and crisp. Alternatively, brush them with oil and air fry or bake them at 170C for 20-25 minutes or till golden. Cool completely.
Meanwhile, mix together all the other ingredients and fill in a piping bag and chill.
Fill the mixture in the hollowed potatoes and garnish with a sprig of parsley or coriander & chopped red bell peppers. Serve.
