Paleo Chicken Buddha Bowl (gluten-free lunch or dinner recipe)

This is a really simple Paleo and gluten-free buddha bowl that uses root veggies, chicken thighs, some fresh veggies, and riced cauliflower. It’s a great one to make ahead in a batch prep sort of manner – cook enough for the whole week in one time.
