Recipe for a perfect Caribbean Wedding Cocktail drink. This was served at my wedding with the name Noel’s Knot or you can call it Groom’s Knot. It’s sweet, milky white and creamy with lime juice and bits of mint in every sip. Refreshing and delicious.
I’ve gotten so many requests for the recipe to “Noel’s Knot, Coconut Mojito”. Here it is! Enjoy! (Recipe per 10 oz. cocktail)
A bunch of Fresh muddled mint (about 10 leaves)
Almost 2 oz. Fresh squeezed lime juice (about 1 lime)
Lots of Crushed ice
1.5 oz. Coco Real coconut cream (more if you want it sweeter)
More than 2 oz. Malibu Rum
About 2 oz. Sparkling Water
Muddle mint & squeeze limes. Shake together mint, lime juice, Malibu, cream and ice. Pour over more crushed ice. Add sparkling water and mint garnish. Enjoy!
