How to Cook Roast Chicken | Baked Chicken Recipe | Oven Roasted Chicken

Today I decided to show you guys how I make a complete Roasted Chicken dinner. I start with brining the chicken, roasting the chicken, roasting potatoes and making a gravy from the chicken pan drippings. Watch and cook with me as I make another meal for my family to enjoy!
INGREDIENTS
(BRINE)
1 gallon of cold water
1/3 cup Kosher or sea salt
1/2 cup sugar (white or brown work)
1/4 cup apple cider vinegar
*Brine overnight for at least 12 hours for best results
(CHICKEN)
5 lb Whole Chicken
3 tbls oil of your choice
Season to taste with your choice of seasonings and spices
1 medium to large yellow onion
2 medium carrots
3 to 4 sticks of celery
1 head of fresh garlic
2 cups water

COTTAGE POTATOES
4 medium sized Russet Potatoes
1/4 cup Oil of your choice
2 to 3 tbls butter
Season to taste
*I used lemon pepper, salt, dried dill and garlic powder

TIPS
*Preheat oven to 375 degrees F
*Roast chicken 15 to 20 minutes per pound
*Internal thermometer should read between 165 to 180 degrees F
*Be sure to allow cooked chicken to rest 30 to 45 minutes
