Layering Drinks is all about the density of the liquids. Syrups and Liqueurs have higher sugar content and therefor sink to the bottom. Spirits have higher alcohol content and therefore can sit on top of the syrups. Finally aerated ingredients like cream and foam are lighter still and can sit atop the spirits.
