Ingredients (Serves 1 | Prep time: 10m | Cooking time: 15m):

– 40g Mixed Salad Leaves
– 10 Pitted Black Olives
– 2 Spring Onions (green only)
– 6 Cherry Tomatoes
– 1 Pepper
– 70g Cucumber
– 200g Baby Potatoes
– 50g Low Fat Mayonnaise
– 2 Rashers Bacon
– 15g Pumpkin Seeds (if allowed in small quantities)
