Sourdough Recipe for bagels
265g water
200g levin ( bubbly active starter)
50g cream
400g flour
combine all then let sit for 20 minutes.
Then add 10g salt to a 1tbsp of water, add to dough and work it into the dough with your fingers. Let sit 30 min then do your first stretch and fold, repeat every 30-45 minutes till you do at least 3 of them. Cover and put in fridge overnight. Next morning put on counter for an hour or two then when ready, cut into pieces and shape into balls, follow steps in video. When you bake them they need to reach 190’F internal temp.

Cinnamon roll dough for monkey bread
1tsp yeast, 1/2 cup hot water 1/4 cup sugar let sit till foamy, I add only a tbsp to the yeast mixture at first. then add 1/8 c milk, 3 tbsp melted butter,, 1tsp salt, 2.5 cups flour, mix together , then knead for 5 minutes, cover set aside in greased bowl to rise till doubled in size. Bake at 350’f for 30 minutes
