🍗 CHICKEN POPPERS

INGREDIENTS:
• 3½ lbs boneless, skinless chicken thighs (cut into bite-size pieces)
• 1 cup all-purpose flour
• 2 eggs
• 1 cup cornstarch
• Neutral oil (for frying)

Sauce:
• 1 cup Frank’s RedHot sauce
• 1 cup BBQ sauce
• ¼ cup ketchup
• ¼ cup honey

DIRECTIONS:
1. Add chicken to a ziplock bag with flour → shake
2. Add eggs → shake again
3. Add cornstarch → shake until coated
4. Fry until crispy (or bake at 400°F)
5. Heat sauce ingredients until thick
6. Toss chicken in sauce and serve

🍗 STUFFED CHICKEN CAPON

INGREDIENTS:
• 8 chicken capons
• 2 boxes mushrooms, sliced
• 1 large onion, chopped
• 5 garlic cloves, minced
• Salt & pepper
• 1 tbsp mayo
• 3 tbsp oil

INSTRUCTIONS:
1. Sauté onions + mushrooms → add garlic, salt, pepper
2. Cool + mix in mayo
3. Stuff and roll chicken
4. Season + place in baking dish
5. Cover and bake at 400°F for 1 hour
6. Uncover + bake 30 min until crispy

🔥 Pro tip: Don’t skip uncovering!

🍗 SHEET PAN TANGY CHICKEN & POTATOES

INGREDIENTS:
• Chicken (bone-in, skin-on)
• Potatoes, wedges
• Onion wedges

Marinade:
• ½ cup oil
• 2 tsp garlic herb seasoning
• 1–1½ tbsp paprika
• 1 tsp citrus garlic seasoning
• Pepper
• 2 tsp salt
• 1 tsp dried cilantro
• 2 tbsp garlic
• Juice of 1 lemon

INSTRUCTIONS:
Add ½ cup water → cover → bake 400°F 1 hour
Uncover → bake 30 min until crispy

🍗 ITALIAN DRESSING CHICKEN

INGREDIENTS:
• 3 potatoes, wedges
• 1 onion, wedges
• Butternut squash slices
• 1 head garlic
• Onion salt
• Chicken thighs + drumsticks
• Italian dressing

INSTRUCTIONS:
1. Add everything to pan
2. Season + drizzle dressing
3. Cover → bake 400°F 1 hour
4. Uncover → bake 1 hour until golden

🍗 OLIVE CHICKEN

INGREDIENTS:
• 3½ lbs chicken thighs
• Yukon gold potatoes
• 1 lemon
• 1 tbsp salt
• Pepper
• 1 tbsp paprika
• 3 tbsp Dijon
• 3 tbsp balsamic
• Onion + garlic

TOPPING:
• 1 cup olives
• ½ cup pepperoncini
• ¼ cup sesame seeds
• ½ cup dill
• Lemon juice
• ⅓ cup oil

INSTRUCTIONS:
Bake at 450°F for 40 min
Top with mixture and serve
